Frijoles Refritos

Ingredients

  • 3 cups dry pinto beans
  • 9 cups water
  • 1 jalapeno
  • 1 large onion
  • 3 cloves garlic
  • 1/4 tsp cumin
  • 2 tsp salt
  • 1 tsp ground black pepper

Tools

a slow cooker

Prep

Wash the beans and soak them overnight.

Instructions

Cut the onion into quarters, finely chop the jalapeno and garlic, and add these to the slow cooker with dry beans and water. Add cumin, salt and black pepper and cook on high for about 8 hrs. Strain beans (save some liquid) and mash them, adding liquid as needed.
