Ingredients
- 4 eggs
- 1/4 cup mirin
- 1/4 cup cooking sake
- 1/4 cup light soy sauce
- 1 tsp sugar
Procedure
Soft boil the eggs, which if you don't have an egg cooker means bringing a pot to a roiling boil, carefully dropping the eggs in and starting the timer, then after 7 minutes or less taking them out. Once boiled, put them in cold water to make peeling easier.
Add the liquid ingredients to a small pot and boil them for about a minute so as to dissolve the sugar and alcohol. Once everything is cooled, put the eggs and liquid in a ziploc bag and keep them in the fridge overnight.
