Congee

I only started making this because I have a pressure cooker, without which it would take a couple of hours easy.

Ingredients

  • 1l water
  • 100g of white rice
  • 1tsp ginger garlic paste
  • 2-3 cubes of fermented beancurd
  • 1tsp salt
  • Garnish:

  • dark soy sauce
  • spring onions
  • crispy onions
  • chilli oil

Prep

Thoroughly rinse the rice.

Instructions

Throw it all in the pressure cooker. Bring to high pressure, then reduce the heat and cook for at least 20min. Release pressure naturally.

Notes

There's a few variables here. I usually make two servings, which is what these quantities come out to. If I need to make more, I will eyeball the ratios and accept the consequences. Bear in mind it's easier to add water than to make it thicker.
