Ingredients
- a head of cauliflower
- lemon juice
- a couple of slices' worth of breadcrumbs
- 50g butter
Prep
Clean the cauliflower, take off the leafy bits and cut out the core. Soak it in salted water for twenty minutes just in case there are any bugs hiding in it.
Instructions
Fill a pot with plenty of salted water, bring it to a boil and put in the cauliflower. At this point you may also add about 75ml of milk and a couple tbsp of lemon juice. Top up with water and weigh it down if necessary, it needs to be completely submerged. Boil for around 15–17 minutes, then let it drip dry while you're prepping the Butterbrösel.
Toast the breadcrumbs in a dry pan, then take them out. Add the butter and another tbsp of lemon juice and let them melt. Add the breadcrumbs back in, heat it until fizzy and pour it over the cauliflower.
Notes
This goes well with boiled potatoes.
