Curry Ketchup

Ingredients

  • 2 tablespoons olive oil
  • 1 medium onion, finely chopped
  • 1 clove garlic, minced
  • 1 tablespoon tomato paste
  • 1 teaspoon salt
  • 1 tablespoon curry powder
  • 1 teaspoon mustard powder
  • 1/2 teaspoon smokey paprika
  • big pinch ground cloves
  • 1/4 teaspoon ground allspice
  • 1/2 teaspoon crushed red pepper flakes
  • 1 tin chopped tomatoes with juice
  • 1/2 cup brown sugar
  • 1/4 cup apple cider vinegar

Instructions

Saute the onion over medium heat. When it starts to brown, add the garlic, fry it for a minute and then add the tomato puree and dry spices. Fry these thoroughly but be careful not to burn, should be about a minute or two. Have the vinegar and tomatoes ready and pour them in soon after, as well as the brown sugar. Stir all of this thoroughly and cook it down for 45 minutes, reducing it to desired consistency. Then puree and strain before bottling.
