Mayonaise

Ingredients

  • 1 egg
  • 2 tsp mustard
  • 2 tsp vinegar
  • 1 lemon
  • salt
  • 150ml vegetable oil or more

Instructions

Discard the egg white and place the yolk in a small bowl.

Add mustard and vinegar. Use a fork to mix it all together, then add the tiniest bit of oil.

Keep stirring, not stopping, and keep adding very small amounts of oil. By the time you've used a third of your oil it should be safe to start adding larger quantities at a time. When you get to two thirds of your oil, it's time to start adding salt and lemon juice (I would start with a half and squeeze carefully) and balance out the ingredients according to taste.
